    Pineapple: Pineapple Paradise Cake

    20 oz. can crushed pineapple with juice
    2 c. all purpose flour
    2 c. sugar
    2 eggs
    1 t. baking soda
    1/2 c. vegetable oil
    1/2 t. coconut flavoring

    ---Coconut Cream Frosting---

    8 oz. package cream cheese, softened
    1/4 c. butter, softened
    1/4 c. sour cream
    1 t. vanilla
    1/4 t. coconut flavoring
    4 c. powdered sugar
    1/2 c. shredded coconut
    1/4 c. reserved pineapple

    Recipe



    Preheat oven to 350. Using fork or slotted spoon, set aside 1/4 c. pineapple for frosting. Combine remaining pineapple with all ingredients except frosting in mixing bowl. Beat at medium speed 2 min, Pour into greased and floured 10x15-inch pan. Bake 20 to 25 min., until toothpick inserted in center comes out clean. Let cool completely, then frost. Frosting- Beat cream cheese, butter, sour cream and flavorings until smooth and creamy. Add powdered sugar and beat until frosting is spreadable consistency. Stir in coconut and pineapple.
