    Pound: Apple Cider Pound Cake

    2 cups self-rising flour
    1/2 teaspoon allspice
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground cloves
    1/4 teaspoon ground cinnamon
    1 cup butter or margarine, softened
    1/2 cup shortening
    3 cups sugar
    6 eggs
    1 cup apple cider
    1 teaspoon vanilla extract
    Caramel Glaze (below)

    Preheat oven to 235°F. Spray a 10-inch tube pan with non-stick vegetable spray.

    In a medium bowl, combine flour, allspice, nutmeg, cloves, and cinnamon.

    In a large mixing bowl, combine butter, shortening, and sugar; beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add flour mixture alternately with apple cider and vanilla, beating well after each addition. Pour into prepared tube pan.

    Bake for 1-1/2 hours or until a tester inserted in the center comes out clean. Cool in tube pan for 20 minutes. Remove from tube pan; cool completely on a wire rack. Drizzle Caramel Glaze over the cake.

    CARAMEL GLAZE

    1/2 cup sugar
    1/4 cup buttermilk
    1/4 teaspoon baking soda
    1-1/2 teaspoons corn syrup
    1/4 cup butter or margarine
    1/4 teaspoon vanilla extract

    In a medium saucepan, combine all ingredients; bring to a full rolling boil. Boil, stirring occasionally, for 10 minutes.

    SERVES 12
