1 1/2 cup of flour
1/2 cup of brown sugar, firmly packed
3/4 cup of softened butter
Mix together the flour, sugar and butter until crumbly. Set aside one half of the crumb mixture. Spread the remaining crumb mixture in an 8 x 12 inch pan and pat down. Bake in a 350ºF. oven for 10 minutes. Remove from oven and spread on Filling. Sprinkle reserved crumbs on top. Bake for an additional 25 minutes.
Filling:
1/2 cup of cut up dates
1 cup of shredded coconut
1/2 cup of chopped nuts
2 egg whites
3/4 cup of sugar
1 teaspoon of vanilla
Combine the dates, coconut and nuts. Whip the egg whites until stiff and add sugar and vanilla. Fold in the date mixture.
