1/2 cup butter or margarine, softened
1 cup sugar
1/2 teaspoon vanilla extract
1-1/2 cups plus 2 tablespoons self-rising flour
1/2 cup milk
4 egg whites, stiffly beaten

Preheat oven to 375°F. Spray 2 9-inch cake pans with non-stick vegetable spray.
In a large mixing bowl, cream butter and sugar until lightly and fluffy. Add vanilla; beat until blended. Add flour alternately with milk, beating well after each addition. Fold egg whites into batter. Pour into prepared cake pans.
Bake for 15 minutes or until a tester inserted in the center comes out clean. Let cool in pans for 5 minutes. Invert onto a wire rack and cool completely.
LANE CAKE FROSTING
6 egg yolks, lightly beaten
3/4 cup plus 2 tablespoons sugar
1/4 teaspoon salt
6 tablespoons butter or margarine
1/4 cup bourbon
3/4 cup chopped pecans
3/4 cup chopped raisins
3/4 cup quartered candied cherries
3/4 cup flaked coconut
1 cup heavy cream, whipped
In a double boiler, combine egg yolks, sugar, salt, and butter; place over simmering water. Cook, stirring constantly, until sugar is dissolved, butter melted and mixture thickened. Remove from heat. Add bourbon; beat for 1 minute.
In a large bowl, combine pecans, raisins, cherries, and coconut; mix well. Stir in egg mixture. Fold in whipped cream.
Spread frosting between layers and on tops and sides of cake. Garnish with cherries. Chill until ready to serve.
