Steamed Persimmon Pudding Cake

List of Ingredients
3 medium sized ripe persimmons
2 tsp baking soda
1/2 cup butter
1 1/2 cups sugar
2 eggs
1 tsp lemon juice
2 tsp vanilla
2 Tbs milk (or brandy)
1 cup unsifted flour
1 tsp cinnamon
1/4 tsp salt
1 cup raisins soaked in brandy ( I guess you could use OJ)
1/2 cup chopped walnuts
Recipe
1. Scoop out persimmons and put in blender or food processor. Measure 1 cup puree and stir in baking soda.
2. In. large bowl cream butter and sugar.
3. Beat in puree and , eggs lemon juice, vanilla, and brandy.
4. Sift flour, cinnamon and salt into mixture. add raisins and nuts andcombine.
5. (This part is tricky if you don't have pudding mold but I think a Bundt pan doubly sealed with foil would work.) Heavily grease mold, put mixture inside and seal.
6. Put on rack over boiling water and steam for 2 1/2 hour adding more boiing water if necessary.
