    Chocolate: The Best Chocolate Cake

    List of Ingredients

    3 cups all-purpose flour
    2 cups sugar
    1/2 cup unsweetened cocoa
    2 teaspoons baking soda
    1 teaspoon salt
    2 cups cold black coffee
    2/3 cup vegetable oil
    2 tablespoons white vinegar
    2 teaspoons vanilla extract
    Chocolate Frosting:
    1/2 cup (1 stick) butter
    3/4 cup unsweetened cocoa
    1/2 cup milk
    4 cups (1 pound) confectioners' sugar
    2 teaspoons vanilla extract





    Recipe

    Preheat the oven to 350 degrees F. Coat two 9-inch round cake pans with nonstick cooking spray. In a large bowl, combine the flour, sugar, cocoa, baking soda, and salt. Add the remaining ingredients except the frosting, and stir until well combined. Pour into the pans and bake for 30 to 35 minutes, or until a wooden toothpick inserted in the center comes out clean. Cool slightly then remove from the pans.

    Frost with Chocolate Frosting: In a small saucepan, melt the butter over medium-low heat. Add the cocoa and stir constantly until smooth. Pour into a medium bowl and allow to cool. Add the milk and blend with an electric beater on medium speed until smooth. Add the confectioners' sugar 1 cup at a time, blending thoroughly after each addition. Add the vanilla and beat on high speed until smooth and creamy. Makes about 2 cups.

    YIELD: Serves 12-15
