    Cake
    Prepare the batter for your favorite sponge cake recipe, yellow cake recipe or our King Arthur Vanilla-Butter Cake Mix. Bake in a Culinique(r) cake pan set or in two 9-inch round cake pans. Cool the layers, and remove them from the pans.

    Coffee Syrup
    1/4 cup sugar
    3 tablespoons water
    1 tablespoon espresso powder
    1 teaspoon vanilla extract

    Filling
    1 package tiramisu mousse mix
    2 cups heavy cream
    1/4 cup sour cream (optional)

    Glaze
    1/2 cup heavy cream
    1 tablespoon corn syrup
    1 cup (5 to 6 ounces) semisweet or bittersweet chocolate - chopped, chunks, or chips

    Syrup: In a small saucepan set over medium heat, boil together the water and sugar until the sugar dissolves. Stir in the espresso powder and vanilla, and set aside to cool.

    Filling: Make the tiramisu mousse according to the package directions, folding an additional 1/4 cup sour cream into the whipped cream, if desired.

    Assembly: Brush the inside edges of the "tunnel," and top and bottom of the cake layers with the coffee syrup. (For two 9-inch round layers, brush all sides of each layer with the syrup.) Allow the syrup to soak in for 5 minutes or so. Fill the recessed "tunnel" areas of both cake layers with the mousse (reserving a bit of mousse for decorating the top of the cake, if desired). (Or top one plain round layer with the mousse.) Place the layers together, "mousse to mousse," pressing gently, and transfer the cake to a serving platter.

    Glaze: In a medium-sized saucepan, bring the cream and corn syrup to a boil. Remove the mixture from the heat, and add the chocolate, stirring until melted and smooth. While the glaze is still warm, pour it over the top of the cake, allowing it to run over the sides.

    Refrigerate the cake for several hours. Garnish it with dollops or rosettes of mousse topped with mocha coffee beans.

    YIELD: 12 to 14 Sinfully Rich Servings
