List of Ingredients
3 C. granulated sugar
3/4 C. light corn syrup
3/4 C. water
1/8 t. salt
3 egg whites
1/3 C. semisweet chocolate chips
2 Bags milk chocolate chips or candy coating
Recipe
In a large saucepan over medium heat, combine the sugar, corn syrup, waterand salt. Heat, stirring, until boiling then continue to cook, using a candythermometer to monitor the temperature.
Beat the egg whites until they arestiff and form peaks. Don't use a plastic bowl for this.
When the sugar solution comes to 270 f or the soft-crack stage, remove from the heat andpour the mixture in thin streams into the egg whites, blending completely with a mixer set on low speed.
Continue to mix until candy begins to hardento the consistency of dough. This may take as long as 20 mins.
At this point add the semisweet chocolate chips. Remember that the candy must be at the consistency of dough at this stage because it will not become any thicker after adding chocolate.
When the chocolate is thoroughly blended press itinto a greased 9x9 dish.
Refrigerate until firm, about 30 mins.
With asharp knife cut into about 14 bars (I made mine bitesize) Melt milk chocolate chips or candy coating in microwave for 2 minutes at half power stirring halfway through.
Dip each bar into chocolate and place on wax paper. Cool.
