Maine Potato Candy

Recipe Introduction
You'd never believe this until you actually tasted one of these...they taste just like a Mounds Bar!
List of Ingredients
- 4 cups confectioners' sugar
- 4 cups flaked coconut
- 3/4 cup cold mashed potaoes (DO NOT ADD MILK OR BUTTER)
- 1 1/2 tsp. vanilla
- 1/2 tsp. salt
- 1 pound semisweet candy coating chocolate
Instructions
- In a large bowl, combine first 5 ingredients.
- Line a 9"x9" square pan with foil. Butter the foil.
- Spread the coconut mixture into the pan. Cover with plastic wrap and chill overnight.
- Cut into 2" rectangles. Cover and FREEZE.
- Melt chocolate in double boiler.
- Dip the frozen bars into coating chocolate and place on waxed paper to harden.
- Store in air tight container.
- YIELD: 2 Pounds
