    Marzipan

    Source of Recipe

Original recipe from Chef Celia Regev - posted to RC by Brenda Lee Olson

    Recipe Introduction

Marzipan is an almond and sugar paste used to ice cakes and other pastries or sculpted into a variety of shapes to be eaten as candy or used as cake decorations.

    List of Ingredients

1 cup finely ground almonds or almond flour
    1/2 cup sugar
    1/2 egg white (about 1 1/2 tablespoons)

*flavoring, optional, see Author's Notes below

    Recipe

Place the almonds and sugar in a food processor equipped with a steel blade and process, adding just enough egg white to bind the sugar and the almonds together.

If it is too soft, add a bit more ground almonds or almond flour.

    Yield: 1 1/2 cups marzipan

    * Author's Note: Celia suggests adding a little cognac, rum, orange-blossom water, orange peel, cinnamon, coriander, or whatever flavor you like to the marzipan before processing.
