    Brittle: Peanut Brittle

    List of Ingredients

    1 1/2 tsp baking soda
    1 tsp water
    1 tsp vanilla
    1 1/2 cups sugar
    1 cup water
    1 cup corn syrup
    3 TB butter
    1 lb shelled,unroasted peanuts




    Recipe

    1. Butter baking sheet. Combine soda, 1 tsp water, vanilla. Set aside.
    2. Combine sugar, 1 cup water, and corn syrup in large pan.
    3. Cook over medium heat, stirring occasionally stirring until 240 degrees on candy thermometer.
    4. Stir in butter and peanuts. Cook, stirring constantly until 300 degrees. Watch carefully so mixture does not burn.
    5. Immediately remove from heat; stir in soda mixture thoroughly.
    6. Pour onto baking sheet and quikly spread to 1/4" thick.
    7. Cool, break candy into pieces.

    YIELD: 5 Servings
