Marmalade: Seville Orange Marmalade

6 small Seville oranges
8 cups water
8 cups sugar, approximately
Recipe
Slice unpeeled oranges very thinly, reserve seeds.
Combine oranges and water in a bowl, cover and let stnd overnight.
Place seeds in a cup, barely cover with water, cover and allow to stand overnight.
Transfer fruit mixture to a large saucepan, bring to the boil, cover and simmer for about 45 minutes, or until rind is soft.
Measure fruit mixture, allow 1 cup of sugar to each cup of the fruit mixture.
Return fruit mixture and sugar to the pan, stir in liquid from the seeds; discard seeds.
Stir over heat, without boiling, until sugar has disloved.
Bring to the boil, boil, uncovered, without stirring, for about 20 minutes or until marmalade jells when tested.
Pour into hot sterilised jars; seal when cold.
