Beef and Vegetable Fried Rice

List of Ingredients
- 1 lb. lean ground beef
- 2 cloves garlic, crushed
- 1/4 tsp. ground ginger
- 2 tsp. vegetable oil
- 1 red bell pepper, cut into 1/2-inch pieces
- 1 package ( 6 oz.) frozen pea pods
- 3 cups cooked cold rice
- 3 Tblsp. soy sauce
- 2 tsp. dark sesame oil
- 1/4 cup sliced green onions
Instructions
- In a large non-stick skillet, brown beef, garlic and ginger over medium heat: 8-10 minutes or until beef is no longer pink., breaking up into 3/4 inch crumbles.
- Remove beef, pour off drippings.
- In same skillet, heat oil over medium-high heat until hot. Stir fry bell pepper and pea pods for 3 minutes or until crisp-tender. Add rice, soy sauce and sesame oil. Mix well.
- Add in beef mixture, heat through, about 5 minutes. Stir in green onions.
- YIELD: Makes 4 (1 1/2 cup ) servings
