Chicken Breasts in a Heavenly Sauce

Recipe Introduction
I meet this actress, Meredith McRee at Diane Sundman's house back in 1978! Meredith was nice enough to share one of her favorite recipes.
List of Ingredients
- 4 small whole boneless chicken breasts, split
- 1/4 cup flour
- 1 tsp. each salt and pepper
- 1 stick of butter
- 2 Tblsp. oil
- 1/2 lb. fresh mushrooms
- 1/2 pint heavy whipping cream
- 1/4 cup champange
Instructions
- Place chicken breasts in a plastic bag with the flour, salt and pepper.
- Shake until breasts are lightly coated. In a skillet, melt the butter and oil over medium high heat. Lightly brown both sides of the chicken.
- Quarter mushrooms and add to the chicken. Cover skillet, lower the heat and cook slowly for 10 minutes.
- Remove the chicken breasts and add the cream and champange to the skillet. When the mixture is as thick as you like, pour the sauce over the chicken and serve.
