List of Ingredients
4 chicken breasts - cut into strips or chunks
4 Tbsp. butter or margarine
4-5 peppers, various colors (green, red, etc) - cut into strips
2 large yellow onions - halved and sliced
2 cups sliced mushrooms (preferebly fresh)
1 Tbsp. of salt
1 Tbsp. of black pepper
3 Tbsp. of paprika
4-5 cloves of garlic finely chopped
1 Tbsp. oregano
1 Tbsp. rosemary
1 cup cream to thicken
1 Tbsp. parsely for garnish
2 Tbsp. parmesan, romano or pecorino cheese to top Recipe
Set oven to 375 deg. F. Melt butter or margarine in a large oven proof dish or aluminum pan. Add chicken and bake for 10-15 minutes until it is still slightly pink inside. Add peppers, onions and spices and bake for another 15 minutes. Stir the mixture each time you add a new ingredient. Add mushrooms and bake for 15 minutes. Remove chicken and vegetables to a separate dish. Stir in cream to remaining juices from chicken and vegetables to thicken. Return chicken and vegetables to pan; stir mixture; sprinkle parsley and cheese on top and serve. YIELD: 4-6 Servings
