    Chicken Spanish Rice Casserole

    List of Ingredients




    1 thinly sliced onion
    1/4 cup chopped celery
    1 finely chopped clove garlic
    28 oz. can tomatoes
    1 cup uncooked brown rice
    1/2 finely chopped red yellow pepper
    1 bay leaf
    1 1/2 tsp salt
    1/2 tsp ground pepper
    pinch of thyme
    10 oz. vegetable juice
    2 cans cooked chicken

    Recipe



    Saute onion, celery, and garlic until onion is transparent.
    Add remaining ingredients.
    Bring to a boil, cover and reduce heat to a simmer for 20 minutes, or until rice is tender.
    When rice is done, add juice and chicken.
    Mix well.
    Put in a casserole dish with lid.
    Bake at 350°F for 25 minutes.
