    1/4 cup butter or margarine

    1/4 cup all-purpose flour

    1 (141/2-ounce) can evaporated milk

    1 cup chicken broth

    1/2 cup water

    3 cups cooked, long-grain rice

    21/2 cups diced, cooked chicken

    1 (3-ounce) can sliced mushrooms, drained

    1/3 cup chopped green pepper

    1/4 cup chopped canned pimiento

    11/2 teaspoons salt

    Recipe



    In a saucepan, melt butter or margarine; blend in all-purpose flour. Add evaporated milk, chicken broth and water; cook quickly, stirring constantly, until mixture bubbles and thickens.

    Add long-grain rice, diced cooked chicken, sliced mushrooms, green pepper, canned pimiento, and salt.

    Pour into greased 2-quart casserole.

    Bake uncovered at 350 degrees for 40 minutes or until heated through.

    Top with 1/4 cup toasted slivered almonds, if desired.


    Makes eight to 10 servings.
