Dad used to make this-it's really good and healthy too! He'd serve it with brocolli and chicken flavored rice-a-roni.
List of Ingredients
- 3 uncooked, skinless boneless breasts of chicken, split
- 6 pineapple sliced - no juice
- 1 can Fat-Free cream of chicken soup
- 1 tsp. instant coffee
- 1 cup low fat shredded cheddar cheese
- salt and pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Place pineapple rings in an 8"x12" baking dish. Top with chicken breasts, salt and pepper.
- Mix condensed soup with coffee and spoon over the chicken. Top with cheese.
- Bake uncovered for 40 minutes or until cheese is melted, at 375 degrees
