    Mario's Spaghetti Beef Spinach Bake

    1/2 cup minced carrot
    1/2 cup minced onion
    1 cup minced celery
    2 cloves garlic, crushed
    1/4 cup butter or margarine
    1/4 cup corn or olive oil
    1 pound lean ground beef
    1 can (6 ounces) tomato paste
    3 cups chopped peeled fresh tomatoes or canned chopped tomatoes
    2 teaspoons salt
    1 1/2 teaspoons dried leaf oregano
    1 teaspoon dried leaf basil
    1/2 teaspoon dried leaf thyme
    1/2 teaspoon Tabasco sauce
    2 cups uncooked noodles
    1 package (10 ounces) frozen chopped spinach
    1/2 cup freshly grated
    Parmesan cheese

    Recipe




    Saute together carrot, onion, celery and garlic in butter and oil; cook until tender.
    Add beef; cook, stirrin, until browned.
    Add tomato paste, tomatoes, salt, oregano, basil, thyme and Tabasco sauce; simmer, uncovered, 1 1/2 hours.
    Cook noodles according to package directions; drain and rinse with cold water.
    Cook spinach; drain well.
    Add noodles and spinach to sauce.
    Spoon mixture into a buttered 2-quart casserole; sprinkle with cheese. Bake in preheated 350 degrees oven 20 minutes or until heated through.
