1 1/4 pound of zucchini, cubed
1/2 pound of Monterey Jack
1/2 pound of Sharp Cheddar cheese
2 teaspoons of baking powder
3 tablespoons of flour
4 eggs, beaten
1/2 cup of milk
1/2 teaspoon of salt, optional
One 4 ounce can of green chilies
*3 tablespoons of butter
Recipe
Boil zucchini in salted water 5 minutes.
Drain and cool.
Mix remaining ingredients with zucchini (*except butter).
Pour into a 9 inch square pan.
Dot with butter.
Bake at 350 degrees for 30-35 minutes.
(Use more chilies if desired.)
