Spicy Beef and Broccoli Sauté

1/4 cup flour
2 teaspoons chili powder
1 pound beef sirloin or round, cut for stir-fry
2 tablespoons olive oil
1 cup water
4 cups small broccoli florets (10 ounces)
1 can (14.5 ounces) diced tomatoes with jalapeños
1 tablespoon sugar
Recipe
1. In a shallow bowl, blend the flour and chili powder. Dredge the beef in the mixture, shaking off and reserving the excess.
2. In a large Dutch oven or wok, heat the oil over medium-high heat until shimmering. Add the beef and cook, stirring, until lightly browned, 2 to 3 minutes. With a slotted spoon, transfer the beef to a plate.
3. Add the water to the pan and scrape up the browned bits. Add the broccoli, cover and cook for 5 minutes. Uncover and cook 1 or 2 minutes to evaporate most of the liquid. Sprinkle with the reserved flour mixture and stir well to blend.
4. Add the diced tomatoes and sugar, and stir well to blend. Return the beef to the pan and cook until heated through, about 2 minutes. Taste for seasoning and add more chili powder if desired.
Makes 6 servings

This would be nice served with a multigrain-rice medley.
Shortcuts: To cut down on prep time: Use pre-cut broccoli and stir-fry beef.
