Vanderbilts Chicken or Turkey Scallop

Use up your leftover chicken or turkey.
List of Ingredients
1/3 cup cooked rice
2 cups chicken consomme
2 1/2 cups chicken or turkey
1/3 cup chopped celery
2 finely diced canned pimentos
2 eggs beaten
1/4 cup heavy cream
3/4 tsp salt
1/8 tsp poultry seasoning
1/4 cup buttered crumbs
Recipe
Preheat to 325F. Grease a 10X6X1.5 inch dish
Cook rice in chicken broth about 10 minutes or until tender
Cobine with remaining ingredients except your crumbs. Pour into baking dish. Top with crumbs
Bake 45 to 50 minutes. Should be hot and browning.
