    Anne Murray's Mother's Gingerbread Men

    1 1/2 cups vegetable shortening
    2 cups granulated sugar
    2 eggs
    1/2 cup molasses
    4 cups all-purpose flour
    2 tsp baking soda
    2 tsp cinnamon
    2 tsp ginger
    1 to 2 tsp ground cloves
    1 tsp salt



    Recipe



    In large bowl, cream shortening with sugar until fluffy; beat in eggs and molasses. Stir together flour, baking soda, cinnamon, ginger, ground cloves to taste and salt; gradually mix into creamed mixture. Gather dough into a ball and knead gently about 6 times.

    Divide the dough in half; place one portion on lightly floured board and wrap remaining dough in plastic until needed. Dust the surface of the dough and the rolling pin with a little flour. Roll out dough to a scant 1/4-in. (5-mm) thickness. With floured gingerbread cutter, cut out gingerbread men. Transfer to lightly greased cookie sheets, about 1 1/2-in. (1-cm) apart. Roll dough scraps and continue cutting out cookies until all the dough is used.


    Add raisins, small candies and/or chocolate chips before baking for colorful eyes and buttons. Bake in 350°F (180°C) oven for 10 to 12 minutes or until edges darken slightly and tops are barely firm when gently touched. Remove cookies to racks to cool completely. Decorate with icing, if desired.

    Makes about 30 gingerbread men (about 5-in./13-cm tall).
