    Recipe Introduction

    Canadian comic actor Dan Aykroyd (Saturday Night Live, Ghostbusters, Blues Brothers 2000) is a co-owner of House of Blues, an L.A. restaurant featuring great music and a range of North American and international dishes, including this Southern-style bread pudding.

    List of Ingredients

    Cream Batter
    6 cups heavy cream 1.4 L
    3 Tbsp butter 50 mL
    12 egg yolks 12
    3/4 cup sugar 175 mL
    1 1/2 tsp cinnamon 7 mL
    1/8 tsp nutmeg 0.5 mL
    1 1/2 Tbsp brown sugar 35 mL
    2 Tbsp vanilla 25 mL
    1/4 cup bourbon 50 mL

    Melt the cream and butter. Blend the remaining ingredients (except the bourbon) into a mixer. Slowly drizzle in the hot cream mixture. Add bourbon.



    Recipe

    Bread Pudding:
    1/2 gal cream batter 1.8 L
    1 French bread (1 lb/500g), cut into 1 inch (3 cm) pieces
    2 Bartlett pears, peeled, cored and cut into 1/8 inch (3mm) slices
    1/2 cup raisins 125 mL
    3/4 Tbsp cinnamon 12 mL
    1/2 tsp nutmeg 2 mL
    1/2 cup brown sugar 125 mL

    In a large bowl, add batter to bread. Stir in the remaining ingredients and mix well. Pour into a 13- x 9- inch (3.5 L) pan coated with cooking spray. Cover with foil and bake at 275 F (130 C) for about 1 hour. Serve with brown sugar, bourbon or custard sauce.

    Serves 12.
