    Dick Sargeant's Chinese Chicken Salad

    List of Ingredients




    ¼ cup oil
    2 to 3 T. vinegar
    2 T. sugar
    ½ t. pepper
    2 oz. rice sticks
    ½ lb. chicken breast, cooked and shredded
    1 small head lettuce, shredded
    2 T. chopped toasted almonds or peanuts
    2 to 3 T. chopped cilantro
    4 green onions, shredded lengthwise
    2 T. toasted sesame seeds
    Salt and pepper

    Recipe



    Combine oil, vinegar, sugar, and pepper, shaking well to mix, and set aside.
    Deep fry rice sticks until light brown.
    Combine chicken, lettuce, almonds, cilantro, green onions, sesame seeds and rice sticks just before serving.
    Toss with dressing and add salt and pepper to taste.

    Serves 6 to 8.
