Recipe Introduction
"Elmo does have a favorite recipe," giggles Sesame Street's little, ticklish red furry guy. "Elmo helps cook it with his Mommy. It's called Toad-in-the-Hole with Moo Mint." Thankfully, Toad-in-the-Hole is not Kermit the Frog on toast but a grilled piece of bread with a hole in middle and filled with a cooked egg. As for Moo Mint, "milk and you put green food coloring in and then you put a little bit of sugar and some mint in it. See, like cow milk; Moo Mint," chuckles Elmo. Just follow the directions to Elmo's happy meal to put a smile on your Rugrats. – Barbara Binstein

1 slice of bread
1 tsp butter or margarine 5 mL
1 egg
salt and pepper
Recipe
Cut and remove a 2 to 2 1/2-inch (5 cm to 7 cm) circle from the centre of the bread. In a small skillet, melt butter over medium-low heat. Place the bread slice and circle in the melted butter. Crack the egg into a small bowl and then pour it into the hole in the bread and cook until egg is set or cooked to desired doneness. Egg may be cooked sunny side up or flipped over once lightly. Season to taste with salt and pepper.
Makes 1 serving.
