List of Ingredients
2 chicken breasts
4 tablespoons butter
3 scallions, chopped
dash cayenne
2 tablespoons toasted almonds
salt to taste
1 onion minced
1 cup dry white wine
2/3 cup sour cream
brandy Recipe
Salt chicken lightly and poach in butter and wine until light brown and done to your liking. Set aside on a silver platter and keep warm. Put 2 tablespoons butter in skillet and cook onion and the scallions with a dash of salt and cayenne until opaque and tender. Slowly add 1/3 cup white wine and the sour cream. Simmer slowly until sauce thickens. Adjust seasonings. Put sauce through a sieve or serve as is over the chicken. Sprinkle with toasted almonds, pour brandy around the platter and light.
Serves 2.
