Recipe Introduction
"Nova Scotia native Holly Cole has only one TV credit on her resume (a guest part on the animated kids show Nilus the Sandman), but her innovative 1996 CD, 'It Happened One Night,' was a multi-media experience almost as good as the box. Besides a selection of Cole's great singing, the disc included six full-length videos and a Q&A session with the jazz artist. This soup is a favorite family recipe passed down from Cole's grandmother."
List of Ingredients
2 medium potatoes 2
1 medium white onion 1
1 stalk of celery 1
2 lbs fresh clams, steamed or 1 kg
2 cans (10 oz) clams 2 cans (284g)
2 cups milk 500mL
2 Tbsp butter 25 mL
sea salt
fresh ground black pepper
Recipe
Peel and dice potatoes and onions; chop celery. Place in saucepan. Pour juice from clams (if using fresh clams, juice must be strained from sand) over raw vegetables.
Simmer, covered, until tender. Add clams and milk. Heat slowly; avoid boiling.
Stir in butter. Add salt and pepper to taste.
