Jackie Gleason's Cranberry Relish Salad

6 cups fresh cranberries
2 cups sugar
2 cups water
1/2 cup almonds, chopped
3 envelopes unflavored gelatin mixed with 1/2 cup warm water
1 1/2 cups red apples, unpeeled and finely sliced
1/2 cup celery, chopped Recipe
1) Combine cranberries, sugar and water; bring to boil. Lower heat and simmer 10 minutes.
2) Stir in softened gelatin mixture. Stir until gelatin is dissolved.
3) Chill in refrigerator until slightly thickened.
4) Fold in apple, almonds and celery. Pour into 2-quart mold.
5) Chill overnight or 12 hours.
6) To unmold, dip into lukewarm water. Pat to loosen and invert on platter.
7) Serve alone or surrounded by frosted cranberries*, candied kumquats, mandarin orange sections or holly leaves.
* Frost cranberries by dipping into slightly beaten egg white then roll in granulated sugar. Dry cranberries in single layer on waxed paper at room temperature.
