Milton Berle's Eggs Benedict

2 eggs
1 English muffin
2 slices Canadian bacon
Hollandaise Sauce
Paprika

Toast and butter the muffin halves. Place slice of sauteed Canadian Bacon on each half and top with poached egg. Pour Hollandaise sauce over them. Sprinkle with paprika to taste.
Note: To make Hollandaise sauce, divide a quarter pound of butter into three parts. Place four egg yolks and one part of butter in top of double boiler. Stir rapidly over hot water until butter is melted; then add second portion of butter and, as it melts, add third portion. Stir continually. Do not permit water in bottom of boiler to come to a boil. When butter is melted, remove pan from heat and continue beating for a few more minutes. Then add 2 tsp. lemon juice, 1 pinch of white pepper and 1 pinch of salt. Replace pan over hot water and beat 1 or 2 minutes more.
