    1 1/4 cups vegetable oil 300 mL
    3/4 cup granulated sugar 175 mL
    3/4 cup brown sugar 175 mL
    3 eggs 3
    2 tsp vanilla 10 mL
    2 cups all-purpose flour 500 mL
    2 tsp cinnamon 10 mL
    1 tsp baking soda 5 mL
    1 tsp salt 5 mL
    3 cups apples, peeled and diced 750 mL
    1 cup dates or raisins, chopped 250 mL
    1 cup pecans, chopped 250 mL

    Caramel Glaze
    1/4 cup butter 50 mL
    1/2 cup brown sugar 125 mL
    2 tbsp light cream 25 mL

    In large bowl, mix together oil and sugars. Add eggs, one at a time, beating after each addition. Stir in vanilla. Combine flour, cinnamon, baking soda and salt; blend into sugar mixture, mixing well (batter will be stiff). Fold in apples, dates and pecans. Spoon batter into greased 13 x 9 (3.5 L) rectangular baking pan. Bake in 350 F (180 C) oven for 45 minutes or until tester inserted in centre comes out clean. Glaze cake while it is still hot.

    CARAMEL GLAZE: In a small saucepan, melt butter. Mix in sugar and cream; bring to boil. Boil 1 minute, then pour evenly over cake. Serve warm or at room temperature.

    Makes 12 servings.
