    Portia de Rossi's Spicy Mango & Carrot Salad

    Recipe Introduction

    "Let's see. What would an Australian actress, living in Los Angeles, playing icy Boston lawyer Nelle Porter on Ally McBeal, consider her favorite food? "It's a toss-up," laughs Portia de Rossi. "Either really yummy sushi or Thai food. No," she says with a laugh, "it's Thai. I absolutely love the peanut sauce." For anyone familiar with de Rossi's homeland, her answer is anything but surprising. In Australia, Thai restaurants outnumber both Chinese restaurants and Italian — including pizza places!"

    List of Ingredients

    Dressing:
    1/4 cup fresh lime juice 50 mL
    2 tbsp fish sauce 25 mL
    1 tsp palm sugar or light brown sugar 5 mL
    1 large clove garlic, minced
    2 fresh hot chilies (or more to taste), chopped & seeded
    1/2 tsp salt or 1 tsp (5 mL) dried shrimp powder 2 mL

    Salad:
    2 cups grated carrots 500 mL
    2 green mangos, peeled & grated
    2 tomatoes, chopped & seeded
    leaf lettuce
    1/2 cup chopped peanuts 125 mL

    Recipe

    Dressing: Combine lime juice, fish sauce, sugar, garlic, chopped chilies and salt, mixing well.
    Salad: In a bowl, mix together grated carrots, mangoes and tomatoes; toss together with dressing. This can be prepared ahead of time to this point and stored, covered in the refrigerator for up to 1 day.

    To serve, line platter with lettuce and mound the salad in the centre; garnish with chopped peanuts.

    Makes 6 to 8 servings.


    Per 6 servings (without lettuce): 164 calories, 5.5 g protein, 7 g fat, 23 g carbohydrate. Per 8 servings (without lettuce): 123 calories, 4 g protein, 5 g fat, 18 g carbohydrate.
