    Amaretto Irish Cream Cheesecake

    1-1/2 cups vanilla wafer crumbs
    1/2 cup finely chopped roasted almonds
    1/4 cup butter or margarine, melted
    1 tablespoon amaretto
    3 8-ounce packages cream cheese, softened
    1 cup sugar
    4 eggs
    1/3 cup heavy cream
    1/3 cup ground toasted almonds
    1/4 cup Irish cream liqueur
    1-1/2 cups sour cream
    1 tablespoon sugar
    1/2 teaspoon vanilla extract
    1/4 cup chopped almonds

    Recipe



    Preheat oven to 350°F. Grease a 10-inch springform pan with butter.

    In a medium bowl, combine wafer crumbs, chopped almonds, butter and amaretto; mix thoroughly. Press evenly onto bottom of prepared springform pan.

    Bake for 10 minutes. Cool.

    In a large mixing bowl, beat cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in heavy cream, ground almonds, and liqueur until blended. Pour over crust.

    Bake for 50 minutes. Turn oven off; let cheesecake stand in oven for 30 minutes.

    In a small bowl, combine sour cream, sugar, and vanilla; stir until well blended. Spoon over cheesecake. Sprinkle almonds around the edge.

    Bake for 5 minutes. Cool. Refrigerate overnight.

    Serves 12
