    Crustless Austrian Cheesecake

    1/2 cup butter or margarine, softened
    1/2 cup sugar
    4 eggs, separated
    1 teaspoon grated lemon rind
    4 ounces cream cheese, softened
    1 cup ground almonds
    Confectioners’ sugar

    Recipe



    Preheat oven to 350°F. Spray a 10-inch springform pan with non-stick vegetable spray.

    In a large mixing bowl, cream butter and sugar until light and fluffy. Add egg yolks, one at a time, beating well after each addition. Beat in lemon rind, cream cheese, and almonds.

    In a medium bowl, beat egg whites until stiff. Fold into cream cheese mixture. Pour into prepared springform pan; smooth the top.

    Bake for 45 minutes or until golden brown and a tester inserted in the center comes out clean. Cool in pan on a wire rack.

    Carefully remove sides of pan; place cheese on a serving plate. Place a paper doily on top of the cheesecake; sift confectioners’ sugar over the doily. Carefully remove the doily without disturbing the pattern.
