2 cups cottage cheese
1/4 cup butter or margarine
1 cup sugar
2 eggs, separated
1 tablespoon cornstarch
3 tablespoons milk
1 tablespoon rum
1/2 teaspoon grated lemon rind
1/3 cup raisins
1 10-inch graham cracker crust Recipe
Preheat oven to 350°F.
Press the cottage cheese through a sieve and drain.
In a large mixing bowl, combine butter, sugar, and egg yolks; beat until foamy. Add cornstarch, rum, cottage cheese, lemon rind, and raisins; blend thoroughly.
In a medium bowl, beat egg whites until soft peaks form. Gently fold egg whites into the cheese mixture. Pour into prepared cracker crust.
Bake for 50 minutes or until edges are golden brown. Cool on a wire rack.
