    2 eggs, separated
    1/4 cup confectioners’ sugar
    1-1/2 cups shredded gouda cheese
    1/3 cup half-and-half
    1/4 cup all-purpose flour
    1 teaspoon lemon juice
    1 teaspoon grated lemon rind
    1/3 cup golden raisins
    2 teaspoons confectioners’ sugar
    1 9-inch graham cracker crust

    Recipe



    Preheat oven to 350°F.

    In a large mixing bowl, combine egg yolks with confectioners’ sugar; beat for 5 minutes or until will blended. Beat in cheese, half-and-half, flour, lemon juice, lemon rind, and raisins.

    In a medium bowl, beat egg whites until frothy; gradually add confectioners’ sugar, beating until stiff peaks form. Fold into cheese mixture. Pour into prepared cracker crust.

    Bake for 45 minutes. Cool to room temperature. Refrigerate for 4 hours before serving.
