CRUST
2 cups self-rising flour
1/4 cup butter or margarine
1/2 cup sugar
1 egg
Grease a 9-inch springform pan with butter.
In a large mixing bowl, combine all ingredients, cutting in the butter until it is well mixed and workable. Divide the dough in half. Line the bottom of the prepared springform pan with one half. On a lightly floured board, roll remaining dough to fit the sides of the pan. Press onto sides of pan. Chill.
FILLING
3 cups cottage cheese
1/2 cup cornstarch
1 teaspoon baking soda
1 cup sugar
4 eggs
1/2 teaspoon grated lemon rind
1/2 teaspoon vanilla extract
1 cup sour cream
1 cup raisins
Preheat oven to 375°F.
Press cottage cheese through a sieve. In a small bowl, combine cornstarch and baking powder; set aside.
In a large mixing bowl, combine cottage cheese, sugar, eggs, lemon rind, and vanilla; beat until smooth. Stir in the cornstarch mixture; blend well. Stir in sour cream and raisins. Pour into prepared crust.
Bake for 1 hour or until filling is set. Turn off the oven; prop door open. Let cheesecake stand in the oven until it reaches room temperature.
