    1/2 cup graham cracker crumbs
    1 cup sugar
    2 tablespoons cornstarch
    5 8-ounce packages cream cheese, softened
    2 eggs
    2 teaspoons vanilla extract
    1/2 cup heavy cream
    2 ripe peaches, peeled and diced
    3/4 cup blueberries

    Preheat oven to 350°F. Grease an 8-inch springform pan with butter. Sprinkle with cracker crumbs.

    In a large mixing bowl, combine sugar and cornstarch. Add cream cheese and beat until smooth. Beat in eggs and vanilla. Gradually add cream, beating until blended. Pour into prepared springform pan, spreading smooth.

    Bake for 1 hour or until a tester inserted near the center comes out clean. Cool in the pan on a wire rack. Cover and refrigerate overnight.

    Before serving, remove cheesecake from pan. Mound peaches around the top edge and fill the center with blueberries.
