Chicken Tetrazini

List of Ingredients
2 chicken breasts, cooked and diced
3 T. butter or margarine
1 small onion, diced
3 T. flour
1 cup whipping cream
1 /4 cup dry sherry
8 oz. linguini, cooked and cooled
1 (8 oz.) package, shredded, 4-cheese blend
1 /2 cup cooked peas
1 /2 cup cooked carrots
Recipe
Melt butter in skillet, add onion and sauté. Sprinkle with flour and cook, stirring constantly for 1 minute. Stir in cream and sherry, cooking an additional minute. Toss in peas and carrots. Add linguini and cheese, toss to blend.
Bake at 350 degrees for 25 minutes.
Makes 4 to 6 servings.
