    Comforting Corn Chowder

    List of Ingredients




    6 slices bacon
    1 med. onion, chopped
    4-5 med. potatoes, peeled, sliced and diced
    2 c. water
    24 soda crackers
    2 c. milk
    2 c. fresh or canned corn
    1 t. salt
    1/2 t. pepper

    Recipe



    Cut bacon into 1/2 inch pieces; place in stockpot and cook until almost crisp.

    Drain grease and add onion and fry until bacon is browned and onion is tender.

    Add water and potatoes and cook until potatoes are tender. While potatoes are cooking; soak crackers in milk.


    When potatoes are tender, add corn and milk-cracker mixture to stockpot. Heat to a low boil. Add salt and pepper to taste.

    If chowder is too thick, add more milk.
