    Biscotti: Biscotti 2

    List of Ingredients

    6 Eggs
    1 1/2 C. Oil
    1 1/2 C. Sugar
    4 1/2 C. Flour
    3 1/2 teas. Baking Powder
    1 1/2 teas. Salt
    1 Tabls. Vanilla or 1/4 teas. Anise Oil
    3/4 C. Chopped Walnuts, toasted


    Recipe

    Toast walnuts at 375 degrees for 4-5 minutes.
    Sift sugar, flour, baking powder and salt together.
    Beat eggs and oil well.
    Add sugar/flour/baking powder/salt mixture to eggs.
    Next, add vanilla and mix well.Finally, add the walnuts.
    Shape into 4 loaves and place on cookie sheets
    lengthwise. Each loaf should be about 4 fingers wide.
    You can brush egg yolk (mixed with a little bit of water)
    on top, and sprinkle with colored candies (jimmies).
    Bake at 350 degrees for 15-20 minutes.
    Cool slightly and slice. Remove the foil from the
    cookie sheets, and then toast the biscotti on them.
    Toast each side at 450 degrees for 3-4 minutes.
    Depending on the size of the eggs, you may have to use
    a little more flour (up to 1/2 cup).
