½ cup plus 1/3 cup butter, softened, divided
1 cup granulated sugar
1 egg
1 package cream cheese
2 teaspoons grated lemon peel
1 teaspoon lemon extract
2 2/3 cups all-purpose flour
½ teaspoon baking powder
4 ½ cups confectioners’ sugar
¼ cup milk
1 ½ teaspoons vanilla extract
blue and black food colorings
Recipe
In a large bowl, using a mixer set on medium, beat ½ cup butter and granulated sugar until fluffy. Beat in egg until just combined. Beat in cream cheese, lemon peel, and lemon extract. Gradually beat in flour and baking powder. Wrap dough and chill until just firm, about 30 minutes.
Preheat oven to 350 degrees. On a floured surface, roll dough to a ¼ “ thickness. Using a bird cookie cutter, cut out shapes. Using a knife, make 3 cuts and split the tail feathers apart. Place shapes on ungreased baking sheets. Bake cookies until edges are just golden, 8-10 minutes. Transfer cookies to wire racks; cool completely.
In a bowl, combine remaining butter, confectioners’ sugar, milk, and vanilla extract until a thick frosting forms. Divide frosting in half. Using blue food coloring, tint 1 half blue. Add 1 drop black food coloring to blue frosting to darken slightly. Add ½ tablespoon dark blue frosting to white frosting to make a blue-gray frosting. Spread dark blue frosting over top half of birds; spread the blue-gray frosting over bottom. Lightly swirl spatula through frosting to create a feather-like appearance. Dip a toothpick in black food coloring and create eyes and beaks on birds.
