    Chip: Coconut Chocolate Chip Cookies w/Crystallized Ginger*

    1/2 cup unsalted butter, softened

    1/3 cup brown sugar

    1/4 cup granulated sugar

    1 large egg

    1/2 teaspoon vanilla extract

    1/2 cup shredded sweetened coconut

    1 1/2 cups (180 grams) all purpose flour

    1/2 teaspoon baking soda

    1/2 teaspoon baking powder

    1/4 teaspoon salt

    4 ounces dark chocolate chips (about 2/3 cups)

    1 tablespoon crystallized ginger, chopped finely

    Recipe

    Preheat oven to 375 degrees F. (Jane’s recipe baked at 350 degrees.) Line two baking sheets with parchment paper.

    Cream together the butter and sugars in an electric mixer. Scrape the sides of the bowl.

    Add the egg and vanilla and cream until light and fluffy.

    Scrape sides of bowl again. Add all the dry ingredients in a separate bowl and whisk to combine. Add the dry ingredients to the creamed mixture.

    Stir in the chocolate chips, coconut and ginger.

    Bake for 10-12 minutes. Let cool on baking sheet for a few minutes before moving them to a wire rack to cool completely.
