    Chocolate "Lasagna" Sandwich Cookies*

    This cookie was the 2008 "Robin's Cookie Exchange" WINNER!
    Cookie:
    2 c. all-purpose flour
    1 3/4 c. sugar
    1 c. cocoa
    2 tsp. baking powder
    1 tsp. salt
    1/4 c. shortening
    2 eggs, beaten
    1/2 c. oil
    1/4 c. water
    1/2 tsp almond extract

    -Sift together dry ingredients. Cut in shortening. Stir in eggs, oil, water, and extract; mixing until well combined. Roll into balls and flatten with the bottom of a drinking glass dipped in sugar. Place on cookie sheet sprayed with nonstick spray. Bake at 350 degrees for 8-10 minutes. Cool completely. Meanwhile, make filling.

    Cream Filling:
    1/2 c. sugar
    2/3 c. shortening
    1 tsp. vanilla
    1 tsp. almond extract
    1/3 c. milk
    1/4 tsp. salt
    1 tsp. water
    1 c. powdered sugar

    -Combine all ingredients except powdered sugar. Beat with an electric mixer for 7 minutes. Add powdered sugar and beat an additional 5 minutes. Sandwich the desired amount of filling between two cookies, or use to "frost" the tops of each cookie. Optional: Drizzle with melted chocolate.
