    Icebox: Cinnamon-Pecan Icebox Cookies

    List of Ingredients

    1 cup butter, softened
    or 1 cup margarine, softened
    3/4 cup sugar
    1/4 cup firmly packed brown sugar
    1 large whole egg
    1 teaspoon vanilla extract
    2-1/4 cups all-purpose flour
    1-1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 cup finely chopped pecans
    1/4 cup sugar
    1-1/2 teaspoons ground cinnamon

    Recipe

    Beat butter at medium speed of an electric mixer until creamy; gradually add 3/4 cup sugar and brown sugar, beating well. Add egg and vanilla, beating well.
    Combine flour, baking powder, and salt; add to creamed mixture, beating well at medium speed. Stir in pecans.

    Cover and chill dough 2 hours.

    Shape dough into 2 (6- x 21/2-inch) rolls. Wrap rolls in wax paper, and freeze until firm.

    Combine 1/4 cup sugar and cinnamon; stir well. Unwrap dough, and roll in sugar mixture. Slice frozen dough into 1/4-inch-thick slices; place on ungreased baking sheets.
    Bake at 350 degrees F for 12 to 14 minutes or until lightly browned. Transfer cookies to wire racks, and let cool completely.

    YIELD: 2 Dozen
