    Macaroon: Cornflake Macaroons

    Joy of Cooking
    Beat until stiff but not dry:
    2 egg whites
    1/8 t salt
    Fold in:
    1 cup sugar
    1/2 tsp vanilla
    2 cup cornflakes
    1 cup chopped nut meats (or 1/2 c nuts)
    1/2 cup shredded coconut

    Drop batter by the teaspoonful well apart on a well-greased sheet. (I used parchment paper)

    Bake at 350 for 15-20 min. Remove at once from pan using a spatula.

    If they stick to the pan return them to the oven to reheat or place the sheet on a wet cloth.

    YIELD: 16 (2") cookies
