1 cup butter (no substitutes), softened
1 1/2 cups confectioner's sugar
2 egg whites
1 tsp. vanilla extract
2 1/2 cups all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
sugar (for rolling)
Recipe
In a mixing bowl, cream butter and confectioner's sugar. Beat in egg whites and vanilla. Combine flour, baking powder and baking soda; gradually add to the creamed mixture.
Roll into 1 1/2 inch balls, then roll in sugar. Place two inches apart on greased baking sheets. Flatten with a fork. Bake at 350 degrees for 12 - 14 minutes, or until edges are lightly browned. Remove to wire racks to cool.
