Drop: Walnut-Topped Ginger Drops

½ cup firmly packed brown sugar
½ cup margarine or butter, softened
1 teaspoon vanilla
1 egg
2 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cardamom
¼ cup half-and-half
3 tablespoons finely chopped candied ginger
42 walnut halves
3 tablespoons white vanilla chips
Recipe
Beat brown sugar into margarine until light and fluffy. Beat in vanilla and egg..
Add flour and all other ingredients but walnuts and vanilla chips. Mix well and drop by rounded teaspoon onto ungreased cookie sheets. Press 1 walnut half onto each cookie.
Bake at 375 for 6 to 9 minutes or until light golden brown. Cool on wire racks
Meanwhile, melt vanilla chips in the microwave in a small resealable plastic bag. Cut a small hole in a bottom corner of the bag and use to drizzle over the cookies.
Yield: 3 ½ dozen cookies.
