    ½ Cup (1 dl) shortening (Palmin)
    2/3 Cup (1-1/3 dl) brown sugar, packed
    1 egg
    2 Cups flour
    1 tsp bicarbonate of soda (baking soda - natron)
    ½ tsp salt
    1 tsp ginger
    ½ tsp cloves
    ½ tsp cinnamon
    1 Cup (2 dl) desiccated (shredded) coconut
    48 small, pitted tenderized dried prunes
    Water
    Sugar for coating

    Preheat oven to 375° F (190° C)

    Cream shortening and brown sugar. Beat in egg and molasses until well blended. Gradually sift in dry ingredients, beating constantly. Stir in coconut. Chill 1-2 hours.

    Set out four cookie sheets lined with baking paper. For each cookie, flatten a spoonful of dough, place the prune in the center, and shape the dough around it. Dip the top of each cookie in water, then in sugar. Place the cookie, sugar side up about 2 inches (5 cm) apart on the baking sheet. Bake 12-15 minutes until light golden brown. Watch the cookies carefully as the oven temperatures can vary greatly from oven to oven.
