Oatmeal: Libby's Irish Oatmeal Cookies

List of Ingredients
- 1 cup flour
- 1 cup white sugar
- 2 1/4 cups "Quick Quaker Oats"
- 1/2 tsp. baking soda
- 1 tsp. baking powder
- 3 Tblsp. maple syrup
- 2 Tblsp. water
- 1 cup butter (no substitutes), melted
Instructions
- Preheat oven to 350 degrees.
- In a large bowl, mix together flour, sugar, oats, baking soda and baking powder.
- In another bowl mix maple syrup, water and butter.
- Mix wet ingredients into dry ingredients.
- Wrap cookie mixture in waxed paper and refridgerate it for 1/2 hour.
- Make 1" sized balls and roll inro granulated sugar. Lightly flatten with hand.
- Place on ungreased baking sheets and bake at 350 degrees for 8-10 minutes.
